Hey friends! 

If you follow me on Instagram, you know I love to (enthusiastically) share new products, resources, tools, and places I've found and love on my Insta stories from time to time. I thought it would be fun to condense all of those products into one post per month so you can see them all and get the details in one handy place!

So without further ado, here are my Favorites of the Month for July 2017! You'll notice I skipped May and June... I took some time off for some much-needed healing and rest. But I feel so rejuvenated today and I'm happy to be back! Enjoy my July faves. :)

I've been known to play songs over and over for hours (Lizzie McGuire, you're an outfit REPEATER!!!) when my heart is just feeling the music. Spotify's Premium plan not only lets me do that to my heart's content, but it eliminates those annoying (and sometimes triggering/dark) ads that steal my focus. It's worth the $10/month to be able to jam the way I want to and remain productive without distracting ads capturing my attention. Plus... I don't need to hear audio of the latest demonic horror movie being promoted. No thanks. 

P.S. My favorite Spotify radio station is "Chill Vibes" and led me to this amazing artist, Wrabel. I adore every song on his EP and keep playing "11 Blocks." It's kind of the best break-up song EVER. Just a really good story! UGH. Not that I've recently had a break-up or anything. Can't a girl just appreciate a break-up song? Geez.

 

Coconut-Cinnamon-Quinoa Breakfast Bowls

Why I'm Obsessed:

It's healthy, it's fast, and it's DELICIOUS.

I am SO obsessed with this new healthy breakfast find. I have literally had it every day for the past two weeks. If you're new to quinoa (like me) you might be hesitant... but this is like the oatmeal of my DREAMS. So light. So delish. SO GOOD FOR ME. What???

The Recipe

Ingredients:

  • 1 tsp. coconut oil
  • 1 tsp. ground cinnamon 
  • 1/4 cup rinsed organic quinoa
  • 3/4 cup coconut milk 
  • Pure maple syrup
  • Crushed or slivered almonds
  • Unsweetened coconut flakes
  • About 4 sliced strawberries

To make:

  1. Melt coconut oil over medium/low heat in small pot. Add cinnamon and stir until fragrant. (Literally about a minute.)
  2. Add your rinsed quinoa to the pot. Stir to coat it with the cinnamon goodness. Add your coconut milk and mix together. Wait until it starts to boil, then reduce heat so it's simmering.
  3. Let it simmer for 12 minutes, stirring occasionally. 
  4. After all the liquid is absorbed (quinoa should be plump and NOT look bone-dry), remove from heat and put into a bowl. Drizzle with pure maple syrup and stir it all in. Then top with almonds, coconut flakes, and strawberries.
  5. PUT IT IN YOUR MOUTH AND GO TO HEAVEN. YOU'RE WELCOME.

Solvang, California

Why I'm Obsessed:

It's a place where you can step back in time and just be.

My sister, cousin, and friends surprised me with a trip to Solvang for my 25th birthday (July 22nd, woop woop!) and it was simply incredible.

Solvang is the sweetest little Danish town near Santa Barbara and Santa Maria. It's filled with amazing culture, delicious Danish food and pastries, and the most beautiful architecture. It was truly like stepping back in time, away from all the distractions of the world. We tasted different kinds of olive oil, rode a 6-person bicycle (my legs are STILL sore), browsed the sweetest little shops, and gazed at the cutest windmills. One of the best things about it was that nobody (tourist, townie, or employee) was in a bad mood. Everyone was kind and filled with joy. It was amazing. I would live there if I could. It was one of the best birthday surprises I've ever had.
